Does it work on Kick and YouTube?

Yes. Kick and YouTube take a browser source the same way Twitch does, so it runs in OBS Studio, Streamlabs and anything else that takes one.

If a sportsbook is paying you, do Kick and Twitch treat it the same?

Branded content is anything produced for a brand in exchange for value — money, or free products. A sportsbook sponsor, a logo on the scene, or a paid endorsement is branded content.
